I am craving for Binagoongan but I have no meat in the fridge. I have tofu though.
So I came up with an easy recipe for a Binagoongan dish with a veggie twist.
Ingredients:
- Garlic Diced
- Onion Diced
- Eggplant Diced
- Tofu
- Water
- Pepper
Instructions:
- Cook tofu.
- Slice tofu.
- Saute' onion and garlic.
- Add eggplant, bagoong and tofu.
- Add a little water. Simmer for a few minutes.
- Add a bit of pepper.
- Serve with rice.
